  • 1 lb Ground Beef or Turkey
  • 2 cups Fresh Spinach (sautéed)
  • 4 cloves Garlic (minced)
  • 1 small Onion (optional, finely chopped)
  • 1 large Egg
  • 1 cup Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes
  • 1 tbsp Italian Seasoning
  • to taste Salt
  • to taste Pepper
  • 1/2 tsp Red Pepper Flakes
  • 1 tbsp Chopped Parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté spinach in olive oil until wilted; let cool and chop.
  3. In a mixing bowl, combine ground meat, sautéed spinach, minced garlic, egg, breadcrumbs, Parmesan cheese, seasoning, salt, pepper, red pepper flakes, and parsley. Mix until just combined.
  4. Form mixture into 1-2 inch meatballs and place on a lined baking sheet.
  5. Bake for 25-30 minutes until golden brown.
  6. Let cool slightly before serving.
