  • 2 large mangoes
  • 1/2 cucumber
  • 1/2 red onion
  • 1 Thai red chili
  • 1/2 cup peanuts or cashews
  • 1/2 cup fresh mint
  • 1/2 cup fresh cilantro
  • 2 tbsp lime juice
  • 2 tbsp coconut aminos
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil

Instructions

  1. In a large mixing bowl, combine peeled and sliced mangoes, cucumber matchsticks, thinly sliced red onion, chili slices, chopped peanuts or cashews, mint, and cilantro.
  2. In a small bowl, whisk together lime juice, coconut aminos, honey or maple syrup, and sesame oil until well combined.
  3. Pour the dressing over the salad just before serving and toss until evenly coated.
