  • 1 lb shrimp (peeled and deveined)
  • 1 ripe avocado
  • ½ cup Greek yogurt or sour cream
  • Corn or flour tortillas (6 small)
  • Shredded red cabbage (1 cup)
  • Shredded carrot (½ cup)
  • Lime juice (3 tbsp total)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ¼ tsp cayenne pepper
  • Salt & pepper (to taste)
  • 1 clove garlic (minced)
  • ¼ cup cilantro (chopped)
  • Water (as needed for consistency)

Instructions

  1. In a mixing bowl, combine shrimp with olive oil, chili powder, smoked paprika, garlic powder, cumin, cayenne pepper, salt, pepper, and lime juice. Let marinate for 10 minutes.
  2. In a blender or food processor, blend avocado, Greek yogurt or sour cream, lime juice, minced garlic, cilantro, and salt until smooth. Add water for desired consistency.
  3. Heat a skillet over medium-high heat and cook marinated shrimp for 2-3 minutes on each side until pink and opaque.
  4. Warm tortillas in a skillet or microwave. Fill each tortilla with shredded cabbage and carrot followed by shrimp. Drizzle with avocado crema and garnish with cilantro.
  5. Serve immediately with lime wedges.
