  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream (or low-fat milk)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion for about 5 minutes until softened.

  6. Mix in cream cheese until fully incorporated.
  7. Add shredded cheddar cheese until melted.
