  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 cup water
  • 1 can (15 oz) red kidney beans (drained and rinsed)

  • Salt and pepper to taste
  • Fresh parsley or basil (chopped, for garnish)

  3. Add crushed tomatoes, chicken broth, and water to the pot. Then stir in red kidney beans, cannellini beans, ditalini pasta, oregano, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes or until pasta is cooked through.
  5. Serve hot, garnished with chopped parsley or basil and freshly grated Parmesan cheese.
