  • 1/4 cup extra virgin olive oil
  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 4 cloves garlic (minced)
  • 3 Roma tomatoes (finely diced) or 8 oz tomato sauce
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 pinch saffron threads
  • Salt and pepper to taste
  • 1/4 cup white apple vinegar
  • 4 boneless skinless chicken thighs (cut into pieces)
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 cup frozen peas
  • 1/2 lb jumbo shrimp (peeled, tail on)
  • 1/2 lb mussels (cleaned)
  • 8 oz calamari rings
  • Lemon wedges for garnish

Instructions

  1. Heat olive oil in a cast iron skillet over medium heat. Add onion, bell peppers, and garlic; cook until onion is translucent.
  2. Stir in tomatoes, bay leaf, paprika, saffron, salt, and pepper; cook for an additional five minutes.
  3. Add white apple vinegar and let it simmer for another ten minutes.
  4. Incorporate chicken pieces and rice; mix well and cook for one minute.
  5. Gradually pour in chicken broth around the pan without stirring. Bring to a boil then reduce heat to medium-low.
  6. After about 15 minutes, add shrimp, mussels, calamari, and peas on top without stirring. Cook for another five minutes until liquid is mostly absorbed.
  7. Remove from heat, cover with a lid or foil, and let it rest for ten minutes before serving.
  8. Garnish with fresh parsley and lemon wedges.
