  • 1/4 cup + 3 tablespoons olive oil
  • 2 cloves garlic
  • 1 tablespoon fresh Mexican oregano, chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 (7-ounce) package cut fideo pasta
  • 1 quart chicken or vegetable broth
  • 1/3 cup chopped cilantro

Instructions

  1. Blend whole tomatoes, 1/4 cup olive oil, garlic, oregano, salt, and cumin until smooth.
  2. In a soup pot over medium heat, heat remaining olive oil. Add fideo pasta and toast until golden brown (about 4 minutes).
  3. Stir in the tomato base and fry for another minute. Add broth and bring to a boil; then reduce heat and simmer until noodles are tender (about 5 minutes).
  4. Stir in chopped cilantro before serving.
