  • 2 tsp cumin
  • 1 tbsp olive oil
  • 2 cups frozen corn
  • 2 medium russet potatoes (peeled and diced)
  • 1 chipotle pepper in adobo sauce (diced)
  • 1 lb chicken breast
  • 6 cups chicken broth
  • 8 oz cream cheese

Instructions

  1. Sauté the diced onion, poblano pepper, and minced garlic in olive oil over medium heat until softened. Stir in chili powder and cumin.
  2. Transfer the sautéed vegetables to a slow cooker. Add frozen corn, diced potatoes, chipotle pepper, chicken breast, adobo sauce, and chicken broth. Mix well.
  3. Cook on low for 6 to 8 hours until the chicken is tender.
  4. About 30 minutes before serving, stir in cream cheese until melted and fully incorporated.
  5. Serve garnished with fresh lime juice, cilantro, and crumbled turkey bacon if desired.
