  • 2 pounds Welsh lamb (shoulder or neck, cubed)
  • 2 tbsp vegetable oil
  • 2 onions (diced)
  • 2 leeks (finely diced)
  • 2 tbsp plain flour
  • 2 cups chicken stock
  • 2 carrots (diced)
  • 2 parsnips (diced)
  • 3 large baking potatoes (thinly sliced)
  • Fresh thyme for seasoning

Instructions

  1. Season the cubed lamb with salt and pepper. In a frying pan, heat vegetable oil over high heat and brown the lamb in batches until seared on all sides. Set aside.
  2. In the same pan, melt butter and sauté the diced onions and leeks until softened.
  3. Add plain flour to create a thick gravy-like mixture, then stir in chicken stock gradually along with Worcestershire sauce, tomato paste, and garlic.
  4. Transfer browned lamb and onion mixture into the slow cooker along with diced carrots, parsnips, and bay leaves.
  5. Layer thinly sliced potatoes on top of the mixture, seasoning them lightly before covering.
  6. Cook on HIGH for 7-8 hours until everything is tender.
  7. For a crispy topping, brush potatoes with melted butter and grill for about 5-7 minutes before serving.
