  • 1.5 pounds ground beef
  • 1 large yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 2 pounds frozen diced potatoes
  • 1 can whole kernel corn (drained)
  • 1 can Rotel diced tomatoes with green chilies (undrained)
  • 1 can condensed cream of mushroom soup
  • 1/2 cup beef broth or milk
  • 2 cups shredded sharp cheddar cheese (divided)

Instructions

  1. Chop the onion and mince the garlic.
  2. In a skillet over medium heat, brown the ground beef until fully cooked and drain excess fat.
  3. Layer all ingredients in the slow cooker starting with the beef, followed by onion, garlic, frozen potatoes, corn, Rotel tomatoes with juice, cream of mushroom soup, broth or milk, spices, salt, and half of the cheddar cheese.
  4. Cover and cook on low for about 3 hours or until heated through.
  5. Stir in remaining cheddar cheese until melted before serving hot.
