  • 1 large sweet onion
  • 3 cups low-sodium beef broth
  • 2 (10-ounce) cans diced tomatoes with green chilies
  • 1 (15.5-ounce) can dark red kidney beans
  • 1 (15.5-ounce) can pinto beans
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cayenne
  • kosher salt and black pepper to taste

Instructions

  1. 1. Brown the ground beef in a skillet over medium heat. Add chopped onion halfway through until soft; stir in minced garlic for one minute.
  2. 2. Drain excess grease and transfer the mixture to a slow cooker.
  3. 3. Whisk together beef broth and tomato paste until smooth; pour over the meat in the slow cooker.
  4. 4. Add diced tomatoes, kidney beans, pinto beans, chili powder, cumin, paprika, brown sugar, and seasonings.
  5. 5. Cover and set the slow cooker to low for 6–8 hours or high for 3–4 hours.
