- 1 ½ lbs ground beef or ground turkey
- 1 large sweet onion
- 3 cups low-sodium beef broth
- 2 (10-ounce) cans diced tomatoes with green chilies
- 1 (15.5-ounce) can dark red kidney beans
- 1 (15.5-ounce) can pinto beans
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 tablespoon brown sugar
- ¼ teaspoon red pepper flakes
- ⅛ teaspoon ground cayenne
- kosher salt and black pepper to taste
- 1. Brown the ground beef in a skillet over medium heat. Add chopped onion halfway through until soft; stir in minced garlic for one minute.
- 2. Drain excess grease and transfer the mixture to a slow cooker.
- 3. Whisk together beef broth and tomato paste until smooth; pour over the meat in the slow cooker.
- 4. Add diced tomatoes, kidney beans, pinto beans, chili powder, cumin, paprika, brown sugar, and seasonings.
- 5. Cover and set the slow cooker to low for 6–8 hours or high for 3–4 hours.
- 6. Taste and adjust seasoning before serving.
