  • 1 cup crumbled feta cheese
  • 2 cups fresh spinach (lightly sautéed)
  • ½ cup sun-dried tomatoes (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant (about 1 minute), then add spinach and cook until wilted. Remove from heat and let cool slightly.
  3. In a bowl, combine sautéed spinach, feta cheese, sun-dried tomatoes, salt, and pepper.
  4. Place each chicken breast between plastic wrap and pound to an even thickness of about ½ inch.
  5. Spread about two tablespoons of the filling onto each chicken breast, roll tightly from one end, and secure with toothpicks if needed.
  6. Arrange the rolls seam-side down in the prepared baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C). Serve warm.
