  • 3 lbs beef chuck roast
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 34 dried guajillo chilies
  • 23 dried ancho chilies
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon chili powder
  • 4 cups beef broth
  • Salt and pepper to taste
  • Jalapeño or serrano peppers (optional)
  • 1 tablespoon apple cider vinegar (optional)
  • Fresh cilantro (optional)

Instructions

  1. Prepare the chilies by removing stems and seeds. Toast them in a dry pan over low heat until fragrant.
  2. In a blender, combine toasted chilies, minced garlic, onion, ground cumin, dried oregano, chili powder, and beef broth. Blend until smooth.
  3. Place the beef chuck roast in the crockpot and pour the marinade over it. Season with salt and pepper.
  4. Cover and cook on low for 8-10 hours or high for 4-6 hours until tender.
  5. Shred the meat with two forks and return it to the sauce.
  6. Serve in bowls garnished with chopped onion and cilantro alongside lime wedges and warm tortillas.
