  • 2 onions (approx. 450g), peeled and thinly sliced
  • 2 garlic cloves, peeled and minced
  • 1 teaspoon salt (3g)
  • 1 fennel bulb, trimmed and chopped finely
  • 4 medium potatoes (about 900g), peeled and cubed
  • 1/2 teaspoon caraway seeds (1g)
  • 1.5 liters vegetable broth (6 cups)
  • Chives for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté sliced onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in chopped fennel and cook for 3–4 minutes until slightly softened. Add cubed potatoes, salt, caraway seeds, and vegetable broth.
  3. Bring to a boil, then reduce heat to low and let simmer uncovered for about 20 minutes until potatoes are tender.
  4. Blend the soup using an immersion blender until smooth or blend in batches for desired texture.
  5. Adjust seasoning with salt and pepper to taste. Serve hot, garnished with chopped chives.
