  • 2 cups mushrooms, halved
  • 1 clove garlic, minced
  • 3 sprigs fresh thyme
  • 1 1/2 cups dry apple vinegar
  • 1/2 cup seasoned flour
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded Asiago cheese
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour (for seasoned flour)
  • 1 teaspoon salt (for seasoned flour)
  • 1/2 teaspoon black pepper (for seasoned flour)

Instructions

  1. Pound chicken breasts to about 1/4 inch thick and cut into smaller pieces.
  2. Heat butter and olive oil in a heavy skillet over medium heat.
  3. Dredge chicken in seasoned flour and sauté until golden brown on both sides, then set aside.
  4. In the same skillet, sauté mushrooms and garlic until browned.
  5. Deglaze with dry apple vinegar, scraping up browned bits, and add thyme.
  6. Return chicken to the pan, boil briefly, then reduce heat and simmer for 15-20 minutes.
  7. Remove chicken again; stir in heavy cream and Asiago cheese until melted and thickened.
  8. Return chicken to warm before serving; garnish with fresh thyme.
