  • 2 tablespoons extra virgin olive oil
  • 6 cups heated chicken stock
  • 1 pound Italian turkey sausage
  • 3 cups baby spinach
  • 2 cups dry pasta (Ditalini)
  • ½ cup grated Parmesan cheese
  • Heavy cream

Instructions

  1. Preheat your oven to 450°F. Line a sheet tray with foil.
  2. Roast the peeled and cubed butternut squash with olive oil and black pepper for about 20 minutes until tender.
  3. Cook pasta according to package instructions; drain and set aside.
  4. In a medium pot, brown the sausage over medium-high heat, then add butter and sauté leeks, carrots, and celery.
