  • ½ cup softened butter (for filling)
  • 1 cup brown sugar (light or dark)
  • 8 oz full-fat cream cheese (softened)

Instructions

  1. Proof the yeast by combining warm buttermilk with active dry yeast in a small bowl; let it sit for about 5 minutes until frothy.
  2. In a stand mixer, combine bread flour, sugar, cocoa powder, eggs, softened butter, gel food coloring, vanilla extract, fine salt, and the proofed yeast mixture. Mix on low then medium speed until smooth.
  3. Cover the dough with a clean kitchen towel and let it rise in a warm place until doubled in size (about 1 hour).
  4. Prepare the filling by mixing softened butter with brown sugar, ground cinnamon, cocoa powder, and a pinch of salt.
  5. Roll out the risen dough into a rectangle, spread the filling evenly over it, and roll tightly from one end to another; cut into equal pieces.
