  • 2 tablespoons olive oil
  • 1214 ounces turkey sausage (cut into slices)
  • 1 large yellow onion (diced)
  • 2 celery ribs (diced)
  • 1 small red bell pepper (diced)
  • 1 small green bell pepper (diced)
  • 6 cloves garlic (minced)
  • 6 to 7 cups low sodium vegetable broth
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • ⅛ teaspoon ground cayenne red pepper (or to taste)
  • freshly ground black pepper (to taste)
  • ½ cup chopped fresh parsley (plus more for garnish)
  • ¼ cup chopped fresh green onions (plus more for garnish)
  • 1½ cups long grain brown rice or white rice (cooked according to the directions on the package)

Instructions

  1. Soak the dry beans in water for at least 8 hours or overnight.
  2. In a large Dutch oven, heat olive oil over medium heat and brown the turkey sausage. Remove and set aside.
  3. Sauté onions in the same pot for about 3 minutes, then add celery, bell peppers, and garlic; cook until softened.
  4. Stir in seasonings and pour in the vegetable broth while scraping up any browned bits.
  5. Add drained beans and browned sausage back into the pot. Bring to a boil, then reduce heat and simmer for 1½ to 2 hours until beans are tender.
  6. Mash some of the beans for creaminess. Adjust consistency with additional broth if needed.
  7. Stir in fresh parsley and green onions before serving over cooked rice.
