  • 1 cup whipping cream (cold)
  • 1 lb mascarpone cheese
  • 22 oz raspberries (fresh or frozen)
  • Juice of 2 lemons
  • Ladyfingers

  2. In a mixing bowl, whisk eggs, sugar, and salt until combined. Mix in the butter until smooth.
  3. Whip cold cream to stiff peaks and fold it into the egg mixture gently.
  4. In a baking dish, layer half of the ladyfingers, followed by half of the cream mixture and half of the cooled raspberry curd. Repeat layers.
  5. Cover and refrigerate for at least 4 hours or overnight before serving.
