  • 2 cups gluten-free flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (or vegan alternative)
  • 1.5 tablespoons cornstarch
  • 3 tablespoons milk
  • 3 tablespoons raspberry syrup
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 heaping tablespoons cornstarch mixed with 3 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together the gluten-free flour, cornstarch, baking powder, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add milk, raspberry syrup, and a mixture of cornstarch with water to the butter-sugar mix; beat until combined.
  5. Gradually add the dry ingredients to the wet mix until just combined.
  6. Gently fold in whole and chopped frozen raspberries.
  7. Scoop rounded balls of dough onto a parchment-lined baking sheet about two inches apart.
  8. Bake for 15-18 minutes or until edges are lightly golden.
  9. Cool on a wire rack before serving.
