  • Olive oil for frying
  • Sliced avocado
  • 1 medium carrot, peeled
  • 45 cherry tomatoes
  • 68 cucumber slices
  • 2 tbsp red cabbage sauerkraut
  • 2 tbsp white sauerkraut
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a nonstick frying pan over medium heat. Crack the eggs gently into the pan and cook sunny-side up until the whites are set.
  2. While the eggs are cooking, slice the cucumber and avocado into bite-sized pieces, wash the cherry tomatoes, and peel and slice the carrot.
  3. Once the eggs are done, arrange the veggies on a serving plate. Add both types of sauerkraut and place the sunny-side-up eggs in the center.
  4. Season with salt and pepper to taste before serving.
