  • ½ cup brown sugar (packed)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ¼ cup brown sugar (for filling)
  • ½ cup pumpkin puree
  • 1 large egg (room temperature)
  • ¼ cup non-dairy milk (for filling)

Instructions

  1. Preheat your oven to 350℉ and line a cookie sheet with parchment paper.
  2. In a bowl, mix flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until smooth. Gradually add sugars, then mix in egg yolk and vanilla.
  3. Combine dry ingredients into the wet mixture until just combined.
  4. Roll dough into balls, coat in coarse sugar, and place on the cookie sheet.
