  • ¼ cup (50 grams) granulated sugar
  • 4 large eggs, divided
  • ½ cup packed (100 grams) light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg, freshly grated
  • Pinch cloves
  • Pinch coarse kosher salt
  • 1 (15 ounce) can 100% pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, blend mascarpone cheese and granulated sugar until smooth using an electric mixer.
  3. Add 2 eggs and vanilla extract; mix until fully incorporated.
  4. In another bowl, whisk the remaining 2 eggs with brown sugar, cinnamon, nutmeg, cloves, salt, and pumpkin puree; combine well.
  5. Gently fold the mascarpone mixture into the pumpkin mixture until thoroughly mixed.
  6. Pour the filling into the prepared spelt crust and smooth the top.
