  • 1/2 cup organic pumpkin puree
  • 2 Tbsp coconut oil, melted
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup plant-based vanilla protein powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup miniature dark chocolate chips
  • 1/2 cup dark chocolate chips
  • 2 Tbsp almond butter

Instructions

  1. Line an 8" x 4" loaf pan with parchment paper.
  2. In a mixing bowl, combine almond butter, pumpkin puree, melted coconut oil, maple syrup, and vanilla extract until smooth.
  3. Mix in plant-based protein powder, cinnamon, and salt until you achieve a thick dough-like consistency.
  4. Fold in miniature dark chocolate chips.
  5. Press the mixture firmly into the prepared loaf pan.
  6. For the topping, melt dark chocolate chips and mix with almond butter until smooth; pour over the base.
  7. Chill in the refrigerator for at least one hour before slicing into bars.
