  • 1 cup finely chopped walnuts
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter, melted
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 16 oz cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T. salted butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. For the walnut crust: Combine chopped walnuts, almond flour, white sugar, and melted butter in a bowl. Press mixture into the bottom of the prepared dish.
  3. For the filling: In another bowl, mix cream cheese and white sugar until smooth. Add eggs one at a time, mixing well after each addition. Reserve 1½ cups of this mixture.
  4. Stir pumpkin puree and pumpkin spice into the reserved cream cheese mixture. Pour the remaining cream cheese mixture over the crust, followed by the pumpkin layer on top.
  5. Prepare streusel by mixing sugars, oats, flour, softened butter, and vanilla until crumbly. Sprinkle over the pumpkin layer.
  6. Bake for about 60-70 minutes until set in the middle. Cool slightly before chilling in the fridge for at least two hours before cutting into squares.
