  • 8 oz cream cheese softened
  • 1/3 cup white sugar
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix vegetable oil, sugar, and eggs until blended. Stir in pumpkin puree and vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ginger. Gradually add to the wet mixture.
  4. Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
  5. For the frosting, beat softened cream cheese with sugar and vanilla until smooth.
  6. For the streusel topping, combine light brown sugar, white sugar, butter, flour, and spices until crumbly.
  7. Once cooled, spread cream cheese frosting over the cake and sprinkle with streusel.
