  • 4 pounds boneless beef shoulder
  • 1 large yellow onion
  • 1 can ginger beef broth
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. In a slow cooker or Instant Pot, place trimmed boneless beef shoulder and top with sliced onions. Pour ginger beef broth over the meat, cover, and cook on low for about 6 hours (or high for 3 hours) until tender.
  2. Cook elbow macaroni in boiling water according to package instructions until al dente. Drain and set aside.
  3. In a saucepan, melt butter over medium heat; whisk in flour for about a minute. Gradually add warmed milk while whisking until thickened. Stir in shredded cheddar cheese until melted.
  4. Shred cooked beef using two forks; combine macaroni, pulled beef, BBQ sauce (to taste), and cheese sauce in a mixing bowl.
  5. Preheat oven to 350°F (175°C). Transfer mixture to a baking dish and bake for about 20 minutes or until heated through.
