  • 1 medium onion, grated
  • 4 medium potatoes, grated and drained
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt and freshly ground black pepper to taste
  • 6 ripe tomatoes, diced
  • 150g fresh mozzarella cheese, shredded
  • Fresh dill, chopped
  • Olive oil for frying

Instructions

  1. In a mixing bowl, combine grated onion and potatoes. Mix in eggs, flour, salt, and pepper until well combined.
  2. Heat olive oil in a non-stick pan over medium heat. Spoon batter into the pan to form pancakes and cook for about 2 minutes on each side until golden brown.
  3. Meanwhile, preheat the oven to 200°C (400°F). In another bowl, mix diced tomatoes with half the mozzarella and chopped dill.
  4. Top cooked pancakes with the tomato mixture and remaining mozzarella. Bake in the oven for about 15 minutes until cheese is melted.
  5. Serve warm, garnished with additional dill if desired.
