Ingredients

Scale
  • 3 pounds boneless skinless chicken thighs (or sliced boneless skinless chicken breast)
  • 2 tsp olive oil
  • 1 can chipotle peppers in adobo sauce (7 oz)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • ½ cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. In a mixing bowl, blend chipotle peppers, olive oil, lime juice, orange juice, cilantro, garlic cloves, onion, cumin, oregano, smoked paprika, salt, and pepper until smooth.
  2. Place the chicken in a large dish or resealable bag and pour marinade over it. Ensure it's well coated and marinate for at least 30 minutes (up to 24 hours for deeper flavor).
  3. Heat a cast iron skillet or grill over medium-high heat; add olive oil if necessary. Cook the marinated chicken pieces for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
