  • 1 large fresh pineapple
  • 4 kiwis
  • 810 fresh mint leaves
  • 2 limes
  • 2 tablespoons honey

Instructions

  1. Toast the coconut in a skillet over medium-low heat until lightly browned (3-5 minutes). Set aside.
  2. Cube the pineapple and scoop out the kiwi flesh, cutting both into bite-sized pieces.
  3. Thinly slice mint leaves and add to the fruit mix in a large bowl.
  4. In a separate bowl, zest and juice limes, whisking in honey until combined.
  5. Pour the dressing over the fruit, tossing gently to coat.
  6. Chill for at least 30 minutes before serving. Sprinkle toasted coconut on top right before serving.
