  • 1.5 lbs boneless skinless chicken breasts
  • Salt and black pepper
  • Cooking oil
  • Soy sauce
  • Water
  • Brown sugar
  • Ginger powder
  • Rice vinegar
  • Cornstarch
  • Garlic cloves
  • Cooked rice (brown or white)
  • Green onion
  • Sesame seeds for garnish

Instructions

  1. Prepare the pineapple boats by cutting the pineapple in half lengthwise and scooping out the flesh, reserving 1 cup of chunks.
  2. Season the chicken with salt and black pepper in a mixing bowl.
  3. Heat oil in a skillet over medium-high heat and cook the chicken until golden brown (about 5–7 minutes).
  4. In a separate bowl, whisk together reserved pineapple chunks, soy sauce, water, brown sugar, ginger powder, rice vinegar, cornstarch, and minced garlic.
  5. Pour the teriyaki sauce over the cooked chicken; stir well and cook for another 5 minutes until thickened.
  6. Spoon the mixture into each pineapple boat and serve over rice. Garnish with green onions and sesame seeds.
