  • 1 cup pineapple, cut into cubes
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • Salt and pepper to taste
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown and fully cooked. Remove from skillet.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  3. Stir in pineapple chunks and cook for an additional 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil while stirring occasionally.
  5. Lower heat to simmer, cover the skillet, and cook for 18-20 minutes until rice is tender and liquid is absorbed.
  6. Return the cooked chicken to the skillet, mix well, heat through before serving.
  7. Garnish with sliced green onions and sesame seeds.
