  • 1 lb. Cannellini Beans (soaked overnight or 1 can)
  • 8 cups Chicken Stock
  • 3 Carrots (sliced)
  • 3 stalks Celery (diced)
  • 1 Onion (diced)
  • 46 cloves Garlic (minced)
  • 1 quart Tomato Juice
  • 1 can Diced Tomatoes
  • 1 lb. Ditalini Pasta
  • Salt
  • Pepper
  • Thyme
  • Basil
  • Oregano

Instructions

  1. In a heavy pot over medium-high heat, add oil and cook sliced kielbasa until browned.
  2. Add diced onion; sauté until soft. Then add carrots and celery; cook until tender.
  3. Stir in garlic and seasonings; cook until fragrant.
  4. Pour in tomato juice, diced tomatoes, and chicken stock; bring to a boil.
  5. Add soaked beans; simmer for 45–60 minutes until beans are tender.
  6. Incorporate ditalini pasta; cook for an additional 10–12 minutes until al dente.
