  • 1/2 cup unsalted butter (divided)
  • 1 cup packed brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (divided)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, melt half of the butter, then add brown sugar, heavy cream, half the vanilla extract, and salt. Stir until smooth and let cool slightly.
  3. Arrange pecans in the bottom of the prepared cake pan and pour the caramel mixture over them.
  4. In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream remaining butter with granulated sugar until fluffy. Add eggs one at a time and stir in remaining vanilla extract.
  5. Gradually mix dry ingredients into wet ingredients alternating with milk until just combined.
  6. Pour batter over pecan topping and smooth the surface. Bake for 35–40 minutes or until a toothpick comes out clean.
  7. Allow cooling for five minutes before inverting onto a serving plate.
