Instructions

  1. If using fresh peaches, peel and chop them; if using frozen, thaw slightly.
  2. In a blender or food processor, combine peaches, Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice (if using). Blend until smooth and creamy.
  3. Taste the mixture and adjust sweetness if necessary.
  4. If you have an ice cream maker, pour the mixture in and churn according to manufacturer instructions for about 20–25 minutes.
  5. If not using an ice cream maker, transfer the mixture to a shallow freezer-safe container. Freeze for 1–2 hours then stir well; repeat every 30–60 minutes until it reaches a soft-serve consistency (about 3–4 hours total).
  6. Serve immediately for a soft texture or freeze for another 2–3 hours for firmer scoops.
