  • ⅛ teaspoon almond extract
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar

  • ⅓ cup all-purpose flour
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 4 ounces cream cheese (room temperature)
  • 12 tablespoons unsalted butter (room temperature; 6 ounces)
  • 1 ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 4 large eggs (room temperature)

Instructions

  1. Preheat your oven to 325°F. Grease and flour a 9×5-inch loaf pan and line it with parchment paper.
  2. In a bowl, mix chopped peaches, lemon juice, granulated sugar, cornstarch, melted butter, vanilla extract, and almond extract. Set aside.
  3. In another bowl, beat cream cheese and butter until creamy. Gradually add granulated sugar and brown sugar; mix until fluffy. Add eggs one at a time, followed by extracts.
  4. In a separate bowl, whisk together all-purpose flour, salt, and baking powder.
  5. Combine wet and dry ingredients gently, then fold in half of the peach mixture.
