  • 1/8 tsp nutmeg (for topping)
  • 1/4 cup salted butter, melted (for topping)
  • 1/3 cup light brown sugar, packed (for topping)
  • 1/2 cup + 1 tbsp all-purpose flour (for topping)
  • 1/3 cup powdered sugar (for glaze)
  • 1/4 tsp vanilla extract (for glaze)
  • pinch of cinnamon (for glaze)
  • 12 tbsp milk (for glaze)

Instructions

  1. 1. Prepare the Peach Filling: In a saucepan, combine diced peaches, sugars, lemon juice, cinnamon, and nutmeg over medium heat. Cook until bubbly, then add cornstarch mixed with water and cook until thickened. Cool in the fridge.
  2. 2. Make the Cookie Dough: Cream together softened butter and sugars; mix in eggs and vanilla. Gradually add flour, baking soda, baking powder, spices until combined. Chill dough for at least 30 minutes.
  3. 3. Assemble the Cookies: Scoop chilled dough into balls. Roll in a cinnamon-sugar mixture before placing on lined baking sheets. Bake at 350°F (175°C) for about 11-13 minutes.
