  • ¾ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon sea salt
  • ½ cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • 3 tablespoons all-purpose flour
  • 1 ½ cups peach puree (about 3 medium peaches)
  • ¼ cup granulated sugar (for topping)
  • ¼ cup water (for topping)
  • 1 cup peach puree (for topping)
  • 1 ½ cups peaches (peeled and sliced)
  • 1 tablespoon cornstarch
  • ½ teaspoon pure vanilla extract (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Butter and flour a 9” springform pan.
  2. Combine graham cracker crumbs, sugar, cinnamon, and melted butter in a bowl; press into the bottom of the prepared pan.
  3. Beat cream cheese and sugar until smooth; add vanilla extract, salt, sour cream, eggs, and flour. Mix until combined and fold in peach puree.
  4. Pour the filling over the crust and bake for about 60 minutes or until slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least four hours or overnight.
  6. For the topping: Cook sugar and water until dissolved; stir in peach puree, sliced peaches, cornstarch mixture, and vanilla extract until thickened.
