  • 2 tablespoons olive oil (divided)
  • 1 pound ground chicken or turkey
  • 21/4 cups mirepoix (3/4 cup diced carrots, 3/4 cup diced celery, 3/4 cup diced yellow onion)
  • 1 tablespoon minced garlic
  • 2 (15-ounce) cans diced tomatoes
  • 2 (32-ounce) cartons reduced-sodium beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups uncooked miniature farfalle pasta
  • 4 cups fresh baby spinach (coarsely chopped, lightly packed when measured)

Instructions

  1. In a large pot over medium-high heat, add 1 tablespoon of olive oil. Once hot, add ground chicken or turkey and cook until browned. Transfer to a paper towel-lined plate.
  2. Drain excess grease but leave about 1 tablespoon in the pot. Add remaining olive oil and mirepoix mixture; sauté for 5–7 minutes until tender.
  3. Stir in garlic and cook for another 30 seconds. Add diced tomatoes, broth, seasonings, and bring to a boil.
  4. Add farfalle pasta to the boiling soup; cook uncovered for 7–9 minutes until tender. Return browned meat and stir in spinach until wilted.
  5. Adjust seasoning as necessary and serve immediately.
