  • 1 cup dry ditalini pasta
  • 1 pound extra lean ground beef
  • 1 large onion (about 1½ cups)
  • 2 medium carrots (peeled and diced)
  • 3 stalks celery (diced)
  • 1 tablespoon minced garlic
  • 1 (28-ounce) can tomato sauce
  • 4 cups chicken broth
  • 1 (15-ounce) can diced tomatoes
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried marjoram
  • 1 (15-ounce can) dark red kidney beans (drained and rinsed)
  • 1 (15-ounce can) great northern beans (drained and rinsed)
  • Salt and pepper to taste

Instructions

  1. In a skillet or slow cooker with browning function, heat olive oil over medium heat. Add ground beef, onion, carrots, and celery. Cook until beef is browned and vegetables are tender.
  2. In a microwave-safe bowl, toss dry ditalini pasta with olive oil and microwave on 30% power for 3 to 5 minutes until lightly blistered.
  3. Transfer cooked meat and vegetables to the slow cooker. Add toasted pasta, tomato sauce, chicken broth, diced tomatoes, herbs, and beans. Stir well.
  4. Cover and cook on low for 2 to 3 hours or until the pasta is tender. Season with salt and pepper before serving.
