  • 1 lb pasta (rotini or fusilli recommended)
  • 2 cups Italian dressing
  • 1 packet dry Italian dressing mix
  • 1 8-oz bottle sun-dried tomatoes
  • 1 can pitted black olives, drained
  • 1 pint grape tomatoes, diced
  • 1 English cucumber, diced
  • 1 red onion, diced

Instructions

  1. Cook the pasta in salted water according to package instructions until al dente. Drain well (do not rinse) and place in a large mixing bowl.
  2. While the pasta is warm, stir in the Italian dressing and dry Italian dressing mix until evenly coated.
  3. Drain and chop the sun-dried tomatoes; add them to the pasta mixture. Cover and refrigerate overnight.
  4. Before serving, add black olives, grape tomatoes, cucumber, and red onion to the salad. Mix gently and refrigerate if not serving immediately.
