  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun or Creole seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes (optional)
  • 1 pound shrimp (peeled and deveined)
  • 2 green onions (chopped, for garnish)
  • Fresh parsley (chopped, for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned.
  2. Stir in diced onion, green bell pepper, red bell pepper, celery, and minced garlic; cook until softened.
  3. Add long-grain rice along with Cajun seasoning, smoked paprika, dried thyme, and cayenne pepper if desired. Mix well.
  4. Pour in chicken broth and diced tomatoes if using; stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes until rice is cooked through.
  6. Gently fold in peeled shrimp; cover again and cook for an additional 5–7 minutes until shrimp are pink and opaque.
  7. Fluff the jambalaya with a fork before serving. Garnish with chopped green onions and fresh parsley.
