  • ½ cup yellow onion, chopped

  • 3 tbsp tomato paste
  • 24 oz jar red pasta sauce or marinara
  • 7 cups beef or chicken broth
  • 910 uncooked lasagna noodles, broken into pieces
  • 3 cups fresh baby spinach
  • ½ cup shredded parmesan cheese
  • 1 cup fresh ricotta cheese

Instructions

  1. In a large Dutch oven, brown the ground beef over medium-high heat for about 8-10 minutes. Drain excess grease and set aside.
  2. Sauté chopped onions in the same pot until translucent (about 5 minutes). Add minced garlic and cook for an additional minute before stirring in tomato paste.
  3. Combine seasonings, red pasta sauce, broth, and browned meat. Bring to a simmer.
  4. Add broken lasagna noodles and cover; let simmer for about 20 minutes until noodles are tender.
