  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 2 cups heavy cream
  • 16.3 oz. refrigerated biscuit dough
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium-high heat. Add the onion, carrots, celery, and a pinch of salt and pepper; sauté for about 8 minutes until softened.
  2. Stir in the garlic, Italian seasoning, sage, and thyme; cook for another minute.
  3. Sprinkle flour over the vegetable mixture; stir to combine for another minute.
  4. Pour in the chicken broth while scraping up any brown bits from the bottom of the pot.
  5. Add shredded chicken, heavy cream, frozen peas, and bay leaves; stir well.
  6. Bring to a gentle simmer; carefully add floured biscuit dough quarters on top without submerging them.
  7. Cover and simmer on low heat for about 15 minutes until dumplings are cooked through. Season with salt and pepper as desired.
