Scale
  • 3/4 cup softened butter
  • 1 and 1/2 cups packed brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 2 and 1/4 cups old-fashioned rolled oats (1 cup whole, 1 and 1/4 cups blended)
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat your oven to 325°F and line baking sheets with parchment paper.
  2. In a mixing bowl, beat softened butter until creamy. Add brown sugar and mix until fluffy. Incorporate the egg, yolk, and vanilla.

  6. Bake for 9-10 minutes or until edges are firm. Reshape while warm if needed.
  7. Cool on racks before serving.
