  • 2 lbs beef chuck roast
  • 4 cloves fresh garlic
  • 1 medium yellow onion
  • 4 dried guajillo peppers
  • 2 tsp ground cumin
  • 2 bay leaves
  • 3 cups chicken broth
  • 1 cup fresh cilantro
  • 2 lime wedges

Instructions

  1. Cut beef chuck roast into large chunks and season with salt and pepper.
  2. Toast guajillo peppers in a skillet over medium heat for about one minute until fragrant.
