  • 1 large onion
  • 2 vine tomatoes
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • ½ teaspoon red pepper flakes
  • 1 cup walnuts
  • 2 tablespoons balsamic vinegar (as substitute for pomegranate molasses)
  • ½ to 1 cup breadcrumbs
  • Salt and black pepper to taste
  • Pomegranate seeds and parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). On a baking tray, place quartered red bell peppers, tomatoes, and onion pieces. Drizzle with olive oil, season with salt and black pepper, then roast for 30 to 40 minutes until slightly charred.
  2. In a skillet over medium heat, sauté minced garlic with tomato paste, cumin, and red pepper flakes until fragrant (about 3 minutes).
  3. In a blender or food processor, combine roasted vegetables with the sautéed mixture and walnuts. Blend until smooth, adding breadcrumbs as necessary for desired consistency.
  4. Adjust seasoning as needed. Serve on a platter garnished with pomegranate seeds and parsley alongside warm pita.
