  • 4 lbs lamb shoulder (bone-in)
  • 1 cup dried apricots, chopped
  • 1/2 cup toasted slivered almonds
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cinnamon stick
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp smoked paprika

Instructions

  2. Sear the lamb on all sides until browned (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions until translucent (4-5 minutes), then add garlic and cook for an additional minute.
  4. Return the lamb to the pot and add apricots, almonds, spices, and enough broth or water to cover half of the lamb.
  5. Cover and simmer on low heat for about 3 hours until tender.
