  • 46 chicken thighs, skin on & bone in
  • 2 tbsp olive oil
  • 6 cloves garlic, minced
  • 1 yellow onion, thinly sliced
  • 1 piece preserved lemon, sliced thinly
  • 1 cup green olives
  • 1 tsp salt
  • 2 tsp pepper
  • 2 tsp ginger
  • 2 tsp paprika
  • 1 tsp cumin
  • ½ tsp turmeric
  • 2 tbsp water

Instructions

  1. In a bowl, mix olive oil, garlic, onion, salt, pepper, ginger, paprika, cumin, turmeric until combined.
  2. Coat chicken thighs with the marinade and let sit for at least 30 minutes.
  3. Preheat oven to 350°F (175°C). Heat olive oil in a Dutch oven over medium heat and sear chicken thighs until golden brown on both sides.
  4. Add preserved lemon and olives to the pot with chicken and pour in water.
  5. Cover and bake for about 60 minutes or until chicken is tender.
