  • 2 cups grated carrots

  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and line muffin tins with paper liners.
  2. In a large bowl, whisk together the dry ingredients: sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts. Add grated zucchini and carrots; stir gently.
  3. In another bowl, mix the wet ingredients: applesauce, maple syrup, eggs, avocado oil, and vanilla until well blended.
